Spinach Quiche

I could never remember what Quiche was called when I was a little girl, so I called it Egg Pie. I’ve always loved quiche. Spinach however is a new love that I don’t know if my children appreciate. They were willing to taste Spinach Quiche and I even got a thumbs up from my 5 year old, but he showed no enthusiasm in finishing his dinner. In the end the kids asked for chicken nuggets. Oh well maybe next time. Due to my children’s disinterest, my husband and I ate way too much.  At least it was healthy.
Quiche is one of those dishes that looks and even sounds a little intimidating. Guess what? It is so easy. Yes it takes a little time – in the oven. If you cheat like my and use refrigerated pie crust. You can whip up quiche in no time.

Spinach Quiche
1 Single pie crust – from scratch or refrigerated
6 slices of diced ham or bacon
8 eggs
1/2 cup sour cream
1/2 cup milk
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon onion powder
3 cups chopped fresh spinach
1 1/2 cheese (I used mild cheddar)

Bake pie crust following directions on recipe or package. While crust is baking combine eggs, sour cream, milk salt pepper, and onion powder. Then add ham, cheese and spinach. Pour mixture into your hot pie crust. Bake at 325 degrees for 45 to 50 minutes or until a knife inserted near center comes out clean.  Let quiche stand for 10 minutes before serving.
