Buttermilk Pancakes

 We love pancakes at our house. We eat them for breakfast, dinner, snacks really anytime – they freeze really well. I realized the other day that I hadn’t made them in a while. So when we had a snow day a little while ago, the kids and I thought pancakes would be perfect. This recipe is really easy and tastes amazing.

Buttermilk Pancakes

 2 eggs
3 tablespoons sugar
2 cups flour
2 teaspoons baking powder
1 teaspoons baking soda
1 teaspoon salt
1/2 teaspoon vanilla extract
4 tablespoons butter, melted
2 1/2 cups buttermilk
In a bowl mix ingredients together until there are no lumps. Be careful not to over mix. Cook on a medium heat griddle lightly buttered. Serve warm with your favorite syrup.
Great recipe to have fun with too. We also made Star Wars pancakes.

  2. I’ve been craving pancakes for days, ever since my daughter was walking around singing the “Makin’ Bacon Pancakes” song from Adventure Time. I lost my recipe for pancakes though, and didn’t want to buy a boxed mix. But I found this one through Show & Tell Saturday so yay! Adding the ingredients to my grocery list right now!
