Taco Salad

How are your new years resolutions going? I, as always, set the goal to get healthy. I started training to run a 10K in September and then I hurt my back.

I was down.

I was hurt.

The training stopped.

The healthy eating went out the window. Its been its been 4 months. I’m finally feeling a little better. I’m back to running a little in the morning but I changed the 10K goal. I’m now hoping I’ll be able to make it through a 5K. Anyway…enough whining.

I’m setting a mid-year resolution and I’m trying again, so frustrating.

 One of my favorite healthy meals is salad. Today I want to share the our Taco Salad Recipe.

Ingredients

1 – 12 oz. bag Mixed Lettuce

1/2 pound Ground Beef or Ground Turkey

1/2 – 1 teaspoon Taco Seasoning

1 – 15.25 oz. can Kidney Beans

1/2 cup Cheese, shredded

(optional) Avocado slices

(optional) Sour Cream

(optional) Salad Dressing

(optional) Corn Chips

(optional) Salsa

Directions

Place lettuce in a large bowl. Brown beef, drain and season with taco seasoning. Drain and rinse kidney beans. Shred cheese.

Toss it together.

Now like any salad you can make it as healthy as you want. I really like my salad with salad dressing so I’m willing to add the extra calories.
