I love, love, love chocolate. But every once in while I feel like I should try something different. Even thought these “Blonde Brownies” are not completely chocolate free, they are close. It is a great recipe to pull out when you want a change of pace.
Frosting always finishes a cupcake and they look fantastic. As much as I love to make cupcakes look beautiful with all that wonderful sugary goodness – I don’t always like to eat it.
Every week my husband and I feed our two bachelor sons Sunday dinner. I feel that it is important that they have at least one healthy meal a week and it gives us the opportunity to keep up with what’s going on in their lives. The challenge in this weekly endeavor however, is having a variety of meals. Chicken again or beef? No we had that last week. How about…? No, Robert won’t eat that. John suggested that Fajitas would be good and I agreed. This called for corn chips and salsa…no we always do that. So in comes the “Guacamole Layer Dip”.
There are probably dozens of recipes out there but we like to make our own Guacamole to go in it.
Start with 1 15 oz can of re-fried beans layered in the bottom of a 9″ baking dish. Sprinkle with 1-2 tbsp taco seasoning. Spread 1 recipe guacamole over beans.
1 tbsp lime juice
1/4 cup tomato salsa (optional)
Cut avocados in half, remove pit and scoop flesh into a gallon size resealable bag. Add lime juice and tomato salsa. Mash and mix by squeezing the bag, leaving lumpy. Add salt to taste.
When mixed squeeze away from 1 corner and cut about 1-1 1/2 inches off and empty the bag into baking dish and spread evenly.
Top with 1 cup sour cream.
Now comes the fun part that isn’t pictured, it depends on who is eating. At this point you can sprinkle on just about anything you want; diced tomatoes, fresh salsa, sliced olives, jalapenos or bacon bits just to mention a few. Then top with finely grated cheddar cheese. Cover with clear plastic wrap and refrigerate until served.
It is great before and during dinner and for a snack later or even for the next day or two. It is just one of those sort of recipes that you can just have fun with.
I found myself wanting to ask you, “Do you remember Ninja Turtles?”
Then I laughed because Turtles are back… they’re here…they never left – I’m not sure. My kids just discovered them and think they are sooo cool. I remember watching Teenage Mutant Ninja Turtles cartoons with my brothers. I loved those crazy pizza loving turtles. We sang the Turtle title song every episode and cringed at some of the gross things they ate on their pizza. Then after watching everything was “dude” and “cowabunga.”(ahh the 80’s) I don’t know why but Michelangelo was always my favorite turtle. Did you watch Turtles? Please tell me I’m not alone. Did you have a favorite?
My son doesn’t have a favorite turtle… yet. He just wants to be a Ninja Turtle so he can have pizza every night. Birthdays at our house are a big deal, but we do not go crazy. This year it would have been so much easier to just go visit a bakery, but I didn’t. I stayed with tradition. We try to keep birthdays pretty simple. Great, but simple. My not so little guy wanted a Lego Turtle Cake for his birthday. I try really hard to make a special cake the way my kiddos want it, even if I have to reach outside of my comfort zone and learn something new. But I didn’t know how to pull this one off. So I decide to cheat just a little bit and top the cake with Turtle Legos. I saw a couple of small Lego sets when I was at the store and thought perfect. But because said birthday boy was with me I didn’t buy the Legos. BIG MISTAKE, BIG – HUGE. I procrastinated too long and when I went back the small sets were all gone.(grrrr!) I already had is birthday present so buying the large set just didn’t make sense. So I’m wondering the store mentally kicking myself for waiting too long and trying to think of a plan B.
I ended up back in the toy section looking at Turtle figures. Turtle cake topper worked, but it need something else. So off the the frozen food section for what Turtles and my guy love most of all PIZZA. I think plan B turned out okay…so did the Birthday Boy! (phew)

I had fun planning my husbands 40th Birthday Party. I didn’t want an “Over the Hill” birthday party with black balloons and “RIP” cupcakes. I wanted it to be fun – not mean. So when I found the phrase, “Prehistoric but not extinct” I new we were going to have Dinosaurs at our party.
The kids thought that was a great idea.
We had to tease him a little bit – he is the birthday boy.
If was hard finding decorations. I guess I waited too long to shop – I couldn’t find exactly what I wanted but we made it work. I wanted a Birthday Banner, but I’m sure you know custom banners are expensive. So I made one. I am not a great artist. I did not freehand this sign. I went to my trusty computer and printed out the lettering I wanted and started tracing. I love how it turned out.
I know it’s a strange assortment of snack foods but the Birthday boy got to pick. I don’t think he got to eat any of it. Everyone else thought they good snacks too.
We also had fun putting this Candy Gram together. My son loved “Do your bones Crunch?” He still loves to ask his dad this question. Sorry Hun!
The cake was a bit tricky to make. I used a large Pyrex bowl and a round cake pan to make the cake. I thought a heavy cake would hold up better for my Volcano so I used our Marble Pound Cake recipe. My inspiration came from this fun video tutorial, by My Cupcake Addiction.
The best part was the steaming volcano surprise. Sorry I didn’t grab my camera quick enough – I promise it looked really cool. There are great instructions for the dry ice in the video.
