Loaded Twice Baked Potates

 I get tired of picking what we’re going to eat for dinner. I often ask my husband if he has any ideas. Most of the time he just says, “something yummy,” which doesn’t help me, but occasionally he comes up with something great, like Twice Baked Potatoes. Now if only he would cook it too.

Loaded Twice Baked Potatoes

4-5 Baked Potatoes
1/2 cup sour cream
1/4 cup butter
1/4 -1/2 cup bacon bits
1-1 1/2 cups cheese (I use Colby Jack)
splash of milk (if needed)
1/2 teaspoon garlic
1 teaspoon onion powder
1 teaspoon parsley

Scrub 4-5 potatoes in warm water. Dry. Use a fork to puncture potatoes or you favorite method. Bake at 425 degrees for 40-60 minutes. Let potatoes cool for about 10 minutes. Cut in half length wise and scoop out the inside into a large mixing bowel. Place potato skin shells in a baking dish. Mash potatoes using your favorite method. Mix in sour cream, butter, bacon, cheese (leave out a little to sprinkle on top if you like),garlic, onion powder, and parsley. Mixture should have similar consistency to regular mashed potatoes. Add a splash of milk if too dry.  Spoon loaded potatoes back in to potatoes skin shells. Return to 425 degree oven for 20-25 minutes. If desired place cheese on potatoes and bake for a few more minutes, until melted.
