Peppermint Ice Cream Dessert

The Christmas holiday is full of great food.  In fact too much great food. When you think about the family favorites that you always make and the wonderful new recipes you read or hear about from friends, there are just to many to choose from.

“Peppermint Ice Cream Dessert”

 is one that we love but only make every two or three years or if I have a party to take it to.  It was my turn to take treats to our quilt group so out came the old favorite.

It is delicious and makes you wonder if one piece is enough.
1 package vanilla wafers, crushed
1/2 cup butter, melted
2 Tbsps. powdered sugar
1 bar German sweet chocolate
1 cup semi-sweet chocolate chips
12 larger marshmallows
1/2 cup hot water
4 eggs separated
1 cup chopped pecans
1/2 gallon peppermint ice cream, softened
Stir together wafer crumbs, powdered sugar and melted butter.  Set aside.  Over low heat, melt together the chocolates, marshmallows and hot water.  When melted remove from heat.  Temper egg yolks and add to chocolate mixture.  Mix well.  Beat egg whites to stiff peaks and fold into chocolate. 

Press 2/3 of the crumbs in the bottom of a 9″ X 13″ X 2″ baking dish and spread 2/3 chocolate mixture on top.  Cut softened ice cream into 1 1/2 inch slices and place on top of chocolate.  Pour remaining chocolate over ice cream and top with remaining crumbs and pecans.  Freeze for at least 4 hours before serving.

It is great for a party or a before bed snack! YUM!!
