Guyanese-Style Chicken Chow Mein

My son, Robert found a new recipe and started asking what some of the ingredients were.  He explained that he had remembered how good Guyanese Chow Mein was and wanted to learn to make some.  Which really meant mom will you guys make it first to see if it is good.  Some of the ingredients however are not readily available so this is our version of
 “Guyanese-Style Chicken Chow Mein”.


5 tbsp oil
2 tbsp grated ginger
1 pepper (hot) chopped fine
2 cup carrots, julienne
1/2 cup celery, sliced
1/2 cup onion, chopped
1 tsp Chinese 5 Spice
1 bunch green onion, julienne, set aside to garnish
2 chicken breasts, bite sized pieces, marinated
2 6 oz packages of Chow Mein noodles
1/2 chicken broth

Chicken Marinade

1 tbsp Oyster sauce
2 tbsp Soy sauce
1 tbsp grated ginger
1 large clove garlic chopped fine
1/4 tsp thyme
1 tsp basil
1/4 tsp marjoram
pinch each of Rosemary and Tarragon

Stir together marinade and add chicken to coat.  Let set 30 minutes.

Heat 2 tbsp oil in wok.  Add marinated chicken and stir until chicken is cooked.  While chicken is cooking, bring a large sauce pan of water to a boil and cook the Chow Mein noodles according to package directions. Drain and rinse with tap water.  Remove cooked chicken from wok and set aside. Wipe wok clean and heat 3 tbsp oil over high heat.  Add ginger and pepper, fry 1 minute. Add vegetable and stir fry for 3-4 minutes.  Add back chicken and broth cover and steam for 5 minutes. Add noodles, Chinese 5-Spice, green onions  and toss together and cook for another 3-4 minutes or until noodles are reheated.

This new style Chow Mein ( for us) has a different flavor and just a little kick. Enjoy.
