I think Pecan Thumbprints are one the prettiest cookies. They are so easy to make and they turn out beautiful. I like mine filled with Butter Cream frosting, but some people prefer jelly or jam. Either way they’re yummy.
Pecan Thumbprints
2/3 cup Butter
1/3 cup Sugar
2 egg yolks
1 teaspoon vanilla
1/2 teaspoon salt
1 1/2 cups flour
1 – 2 cups pecans, finely chopped
Cream butter and sugar until fluffy. Add egg yolks, vanilla and salt. Beat well. Gradually add flour mixing well. Shape into 3/4 in balls. Dip in slightly beaten egg whites, and roll into finely chopped nuts. Place on greased cookie sheet. Press down center of each with thumb.
Bake at 350 degrees for 15 to 17 minutes.
Remove from pan to cool. When completely cooled, fill centers with butter cream frosting.
