Many years ago my sister-in-law introduced Iowa Salad to our family and it quickly became a favorite. After I was married and started my own family it got forgotten. (My husband was not a big jello fan). Just a few years ago, maybe five it was rediscovered.
It is a refreshing summer, fall, spring or just about anytime salad. Make it up the day before and serve it up as a side or appetizer.
1 – 2 oz package orange gelatin
1 – 2 oz package lemon gelatin
2 cups boiling water
1 1/2 cups cold water
1 15 oz can crushed pineapple, drained reserving juice
2 bananas, diced
1 heaping cup mini marshmallows
1/2 cup sugar
2 tbsp flour
1 cup reserved pineapple juice
1 tbsp butter
1 egg, beaten
1 cup whipping cream, whipped
1/2 – 1 cup grated medium cheddar cheese, small grate
In a large mixing bowl, dissolve the gelatin in boiling water. Add cold water and stir. Place in refrigerator until consistency resembles egg whites. Fold in drained pineapple, bananas and mini marshmallows. Pour into 9″ X 13″ X 2″ pan and place in refrigerator to set.
In a small sauce pan mix together flour and sugar. Add pineapple juice and egg. Stir with whisk until there are no lumps. Cook and stir constantly until thick. Stir in butter. Let cool to room temperature or colder. Fold in whipped cream.
Spread on top of get gelatin. Sprinkle with grated cheddar cheese.
The layers make it a pretty dish to take to a party too.
