Pumpkin Bars

Pumpkin Bars are a family favorite and I’m sure your family will love them too. These seasonal treats are a favorite with my grandson, Tyler.  He kept a real close track of them after dinner, waiting very patiently for them to be served.

 
Pumpkin Bars
 
4 eggs
1 cup canola oil
2 cups sugar
1 15oz can pumpkin
2 cups flour
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 tsp cinnamon
1/2 tsp ginger
1/2 tsp cloves
1/2 tsp nutmeg
 
In a large bowl stir together eggs, sugar, oil and pumpkin.  Sift together dry ingredients, add to pumpkin mixture.  Pour batter into greased and floured jelly roll pan.  Bake @ 350 degrees for 20-25 minutes. Cool and frost with cream cheese frosting.
 
 
Cream Cheese Frosting
 
4 oz cream cheese, softened
1/4 cup butter, softened
1 tsp vanilla
2 1/2 cup powdered sugar
Enough milk to make spreading consistency
 
In a small mixing bowl cream together, butter, cream cheese and vanilla.  Gradually add powdered sugar and milk to the consistency that you like to spread.  Frost cooled cake.  Let set and cut into desired sized bars.

      They probably should because of the cream cheese. I freeze my left overs. It keeps them fresh and out of site out of mind. (Saves the hips.) Enjoy.
