We love using fresh herbs from our garden. It’s not a very big herb garden but we do enjoy it. Besides using them in our grilled chicken marinades we like to use them in our rice dishes.
Sunday’s choice was this simple recipe for
“Brown Rice Pilaf”
Ingredients
1/2 cup onion chopped
1/2 cup celery chopped
2 sprigs of fresh thyme
1-2 tbsp dry parsley
2 tbsp butter
1 1/2 cup brown rice
2 1/3 cups chicken broth
1/2 tsp salt
4 green onions sliced
Spread rice in a covered casserole, set aside. In a medium sauce pan saute onion and celery in butter until tender. Add chicken broth and bring to a boil. Stir in salt.
Pour over rice, add parsley and stir. Toss thyme springs on top and cover. Place in 375 degree oven and bake 1 hour. Remove from oven uncover and remove thyme twigs, add green onion and fluff rice with a fork. Cover and set for 5 minutes. Ready to serve and delicious.
It is great served with Lemon Grilled Chicken.
