Beef and Broccoli with Rice

When I was a teenager my Grandparents would take the entire family out for Chinese food, instead of having a Christmas party crammed into their house they decided it would be more fun at a restaurant.  I loved it. I looked forward to it all year. It was so much fun to taste everything everyone had ordered. When we stopped this fun tradition we went searching for recipes of our favorite dishes. This recipe isn’t the same as going out, but it comes close.

Beef and Broccoli

1 pound round or sirloin steak, cut into 1/4 inch strips
4 cups broccoli 
3 tablespoons cornstarch, divided
1 cup beef broth
2 tablespoons water, divided
1 teaspoon garlic powder
3 tablespoon oil
1/3 cup soy sauce
1 tablespoon brown sugar
1 teaspoon ground ginger

Whisk together in a bowl, soy sauce, 2 tablespoons cornstarch, water, and garlic powder. Add sliced beef and mix well. In a large skillet or wok heat 2 tablespoons oil add beef and stir over medium high heat until done. Remove and keep warm. Add remaining oil to pan and add the broccoli. Stir until broccoli is done about 4 -5 min. Return beef to pan. Add beef broth, corn starch, soy sauce, brown  sugar, and ginger. Stir until heated through about 2 min. Serve with rice.
