I’m a little busier these days so I’ve been looking for crock pot recipes. I complain about my kids being picky eaters, but I really shouldn’t because I’m probably even pickier. Good thing I’m the cook. So, as I look for recipes to try I have to consider all our picky-ness.
This marinade has been a family favorite but never tried in the crock pot. I thought it would be a good recipe to start with. I marinated the pork roast overnight and then slow cooked it all the next day. I don’t remember how large my roast was, but the full 8 hours was a little long. You might want to check at 6 hours.
I thought it was really good. The kids however got hung up on the french fries. Oh well!
Pork Marinade
2/3 cup vegetable oil
1/3 cup soy sauce
1/4 cup red wine vinegar (I used apple cider vinegar)
2 tablespoons lemon juice
2 tablespoons Worcestershire Sauce
2 garlic cloves (I used garlic powder)
1 teaspoons pepper
1 teaspoon salt
Mix all ingredients in a closeable gallon plastic bag. Then add pork roast. Marinade over night.
(My sister even suggested freezing for a later date.)
Remove pork form marinade and place in crock pot cover with 1/2 cup water. Cook on low for
6-8 hours.
