No Bake Cookies

When my children were little I was a terrible mother. I always had cookies in the cookie jar. Not only did they know that, but so did all their friends. I can’t say that I always made the cookies for the children because I am the biggest cookie monster of them all.
They are great with glass of ice cold milk.  That makes them healthy, doesn’t it?

One of the favorites was also the easiest to make “No Bake Cookies”. When my oldest son was very young probably 1st grade he said, “they should be called Glops.”
He went as far as crossing out the name and writing “Gloops” above it.
He couldn’t spell very well yet. It is now a family joke.

These are super easy and ready in no time at all.

Ingredients

2 cups granulated sugar
1/2 cup evaporated milk
1/2 cup butter
2 heaping tbsp cocoa powder
1/2 tsp salt
3 1/2 cups quick cooking oats
1 tsp vanilla

Combine sugar, milk, butter, cocoa powder and salt in a large sauce pan. Heat stir over medium heat until butter is melted and small bubbles appear on the bottom when you stir across the pan. DO NOT BOIL!  Remove from heat and stir in the vanilla and oats.
Drop by spoonful or cookie scoopful onto a wax paper covered cookie sheet. Let cool and enjoy. Don’t forget your glass of milk.
