“A party without cake is just another meeting”.
So when Margaret chose another dessert besides cake for her birthday party cupcakes became a great alternative to accompany her other choice.
This is a great recipe. It is small, only makes 12 cupcakes and is easy to throw together.
1/2 cup butter
3/4 cup sugar
2 eggs
1 tsp vanilla
1/2 cup buttermilk
1 1/3 cups flour
3/4 tsp baking powder
1/4 cup baking soda
1/4 tsp salt
In a large mixing bowl, cream butter then gradually add sugar and beat two minutes or until fluffy. Beat in eggs one at at time until well blended. Stir in vanilla. Sift dry ingredients together. Beat in dry ingredients alternating with buttermilk, just until smooth. Divide batter into 12 cupcakes.
Bake at 350 degrees for 20-25 minutes. Frost with butter
cream frosting and top with your favorite sprinkles.

Butter Cream Frosting
1/3 cup butter
3 cups powdered sugar
1/4 cup milk (approximately)
1 1/2 tsp vanilla
pinch of salt
Cream butter, salt and on cup powdered sugar until fluffy. Add remaining powdered sugar and milk alternately until spreading consistency. Stir in vanilla.
