Elsa Cake

My daughter has been bugging me for months now about her birthday.  She has wanted an Elsa cake the entire time, and has been just dying to have it.  Her birthday finally came and we made the cake.  I found this great idea from TwoSistersCrafting.  I thought it was great, it included a link to sugarhero.com to make the “ice” candy.

The cake turned out great!  My daughter loved it!  She is still playing with the little figurines.  We of course also took the cake one step further and the cake itself was teal.

We have a lot of family with birthdays in May, so we had to do a big family party as well.  To keep up with the Frozen theme, I made cupcakes with the left over “ice” candy and little snowflakes.

Yellow Cake with Chocolate Frosting

“Yellow Cake with Chocolate Frosting” is sort of a family tradition.  It was usually the cake of choice when our son Robert was asked what kind he wanted. Mom’s was always a cake mix, but I am a failure with cake mixes. This recipe however always works for me.

Growing up it wasn’t Sunday dinner without cake for dessert. There are several funny stories that go along with that as well. So that it wouldn’t get cut before dinner it was most often placed, frosted and usually sprinkled, in the upper cupboard second shelf on top of the mixing bowls. More that once the cupboard was opened and the cake fell out. Not always a total disaster and most of the time still edible.

Frozen Birthday Cake

My daughter like so many other little girls loves the move Frozen. She can be found most days singing “Let It Go” at the top of her longs while pretending to freeze her brother.  She used to pretend she was a princess – well now she’s a queen. She is queen Elsa and don’t even thinks of demoting her to princess ever again.

So when it was time to plan her birthday cake I wasn’t surprised when she asked for a Frozen cake.  We looked on Pinterest together to find ideas. I had a simple pretty cake in mind. She want the three-layer masterpiece only the Cake Boss could pull off. I had to explain to my little princess… I mean Queen that mommy only makes little, easy cakes. She settled for an ice palace cake.
We used:
Waffle cones covered in frosting and sugar sprinkles for the towers.
Rock Candy suckers for ice towers.
Wilton Candy Melts for snow flakes.
 Sugar Sprinkles for sparkle.

Snow flakes are super easy. Melt the candy melts following directions. I used the microwave. Then I poured the melts into a squeeze bottle. Cover a baking sheet with wax paper. Start drawing little snow flakes. I tried to vary sizes, but the flakes under 2 inches worked best.  Now the secret – 
Freeze.
Let the candy melts set in the freezer. They are so much easier to handle.
Tip: Make lots – you will break a few. All the extras and broken pieces can be used for you next project.

The flakes with the longer tale were a lot of fun. First be sure to make the tale a little thicker the the flakes. When your ready to insert into the cake – prep a hole with a tooth pick.

Attach the other snowflakes with dot of the melted candy melts.

My little queen loved it. I wanted a Queen Elsa cake topper. I had seen little figurine style  Elsa dolls at the store and thought they would work perfect. Of course I put off that purchase until just few days before I need it. Do you think I could find one? Of course not! The really bad part was we put off buying the Big Birthday Surprise too. My daughter really wanted an Elsa dolly. I couldn’t find one of those either. Needless to say her parents felt like real losers.

Checkerboard Cake

We are having fun this year celebrating birthdays.  One thing we are doing is having fun with cakes.  I asked David our oldest son what kind of cake he would like he said “Crumby Cake“.  Now this was a surprise because that is Robert’s favorite cake. He then said, “no let’s make it more challenging, make a two layer checkerboard cake.” I immediately retorted, that a true “Checkerboard Cake” has tree layers and I could do that, secretly knowing that my daughters both have the magic tool to make one. 

This was going to be a fun project, but how to decorate it.  
David is a huge Seattle Seahawks fan, that was the answer.  Here is David’s 

“Seattle Seahawks Checkerboard Cake”. 


Well at least what it looked like before we cut it for the surprise center.

First things first.  I made my favorite plain white cake with a few changes to the measurements and directions.  Because it is a three layer cake it needs a bit more batter.


1 cup Butter
1 cups sugar
3 eggs
2 tsp vanilla
4 cups flour
1 tbsp baking powder
1 1/2 tsp salt
2 cups milk
1/4 cup  cocoa powder


Cream butter and sugar together until light.  Add eggs and vanilla, beat until fluffy.  Sift dry ingredients together and add alternately with milk.  Divide batter in half into two separate bowls. Add enough water to the 1/4 cup of cocoa powder to make a medium paste (about the same consistency of the batter).  Stir into one bowl of batter.  In the other bowl of batter I added green food coloring (team Color). 


Just to help make sure your layers come out of the pan perfectly line the bottom with parchment paper.






Using a large spoon carefully pour batter into the separate divider  sections of the magic tool (checkerboard baking set) that can be purchased at www.target.com and other on line stores.  Be careful to get the different colors of batter at the same level.

Repeat for the other two pans. Be sure to make two layers the same.  Bake at 350° for 25-30 minutes.  Cool.  Assemble cake with frosting in between layers, putting the different layer in the center. Frost cake with  butter cream frosting. 



Butter Cream Frosting
1/3 cup butter
Pinch of salt
3 cup powdered sugar
1/4 cup milk
1 1/2 tsp vanilla

Cream butter, salt, vanilla and one cup powdered sugar until light and fluffy.  Add remaining powdered sugar and milk alternately, beating until smooth and spreading consistency. 




Cutting into the cake is always fun and a surprise to those who have no idea because you can’t tell from the outside.  You can make any color combination you desire.  Mary Catherine made a red and green one for Christmas one year. Have and enjoy.
