Isn’t it great that there are so many different kinds of food to give our food
repertoire so much variety?
This time it is a new twist on South of the Boarder.
Ingredients
2 lbs boneless chicken or beef, cut into 1/4 inch strips
1/2 cup lime juice
1 tbsp minced garlic
6 tbsp olive oil
1 tbsp black pepper
4 tbsp chopped cilantro
1 onion, sliced
1/2 green bell pepper, cut into strips
1/2 red pepper, cut into strips
Mix lime juice, garlic, olive oil, pepper and cilantro in a re-sealable plastic bag. Add meat. Marinate in refrigerator 4 hours or overnight, turning occasionally. Drain marinade. Place meat in hot Wok or large frying pan just coated with olive oil and cook for 2-3 minutes. Add onions and pepper and cook to crisp tender.
Serve with tortillas, grated cheese, sour cream tomato salsa and guacamole.
We tried something different this time and served them on whole wheat flat bread. The boys ate 2 each and that means they were good.
