Something we love but don’t make very often is Quiche.Sometimes we make it for dinner but our favorite meal to eat it is for breakfast, thus Breakfast Quiche.
Breakfast Quiche
1 – 8″ pie crust, unbaked
1 1/2 cup grated Colby- Jack cheese
3 strips of thick sliced bacon, cooked and diced
6 eggs
3/4 cup half and half
1/2 tsp onion powder
Place grated cheese in bottom of pie crust. Sprinkle bacon over cheese. In a large bowl beat together eggs, half and half and onion powder.
Pour into pan over cheese and bacon.
Bake at 375 degrees for 30 minutes or until a knife comes out clean when inserted into the center.
Serves 4-6
It is the perfect main dish menu item for your next brunch.
It’s even good warmed in the microwave the next day, if there is any leftover.
