Dutch Oven Blackberry Huckleberry Cobbler

Every Summer for many years now, our family has had a camp out at Ponderosa State Park. We hike, ride bikes and swim in Payette Lake. This year on one of the hikes Margaret’s family found and picked wild Huckleberries. Our planned Blackberry Cobbler was reinvented. Here is our new recipe for

“Dutch Oven Blackberry Huckleberry Cobbler”.

 

Recipe

4 cups Blackberries

4 cups Huckleberries

1 cup sugar

2 tsp Tapioca

1/2 tsp cinnamon

2 tsp lemon juice

6 Tbsp butter

1 12 oz can lemon-lime soda

1 White cake mix

Cinnamon

Charcoal Bricketts

In an aluminium lined Dutch Oven, mix together Blackberries, Huckleberries, sugar, tapioca cinnamon and lemon juice.

Place on coals and bring to a boil. Dot mixture with half of the butter. Whisk together cake mix and lemon-lime soda, pour over hot berry mixture. Dot with remaining butter and sprinkle with cinnamon.

Cover. PlaceĀ  8-10 coals under Dutch Oven and 18-20 coals on the lid. Cook for 50 minutes or until cake bounces back and berries start to bubble.

We were just a little spoiled. We were close enough to a supper market and earlier in the day we bought vanilla ice cream to serve with it.

It was absolutely delicious!!!
