Apple Cake and Dip

It is that time of year when wonderful fruits and vegetables are harvested. We love new crop apples. They are sweet, crisp and it’s time to bake with them.

This recipe is another old one of my mother’s. I don’t know it’s origin. I just remember how much I loved it when she baked it.
My favorite part of course is the sauce that she always called dip.

Cake

1 cup sugar
1/4 cup butter
1 egg
3 medium apples
1 cup flour
1/2 tsp nutmeg
1/2 tsp cinnamon
1/2 tsp soda
1/2 tsp salt
1/2 cup nuts (optional)

Cream together butter and sugar until light. Add egg and beat until blended. Sift together dry ingredients. Peel and grate apples, immediately blend into creamed mixture. It will look curdled. Mix in dry ingredients. Pour into a 9″ round cake pan. Bake at 350 degrees for 25 – 30 minutes or until a toothpick comes out clean.

Dip

3/4 cup sugar
1 heaping tbsp flour
1 beaten egg
1/4 cup cream
1/2 tsp vanilla

Stir together all the ingredients. Cook and stir over medium until thick. Spoon over warm apple cake.

Just be careful it is hard to eat just a small piece and unfortunately, it is not low cal. Enjoy!!!
