I’m starting to plan menus for our family camp out this summer. We really like to have easy to prepare meals without eating cold cereal for breakfast every day. My favorite meal camping is breakfast and I like a big breakfast. Its nice to be well fueled for an action filled day. Pancake mixes are okay and very convenient but even camping I prefer homemade.
This recipe is really easy to make into a pancake mix. Mix all the dry ingredients together before you leave the house and add the wet ingredients (water, egg, and oil) when your ready to make breakfast. If you are not planning on having scrambled eggs with your pancakes you can add powdered egg to your mix or you could leave it out, they still taste good. They might just be a little flat. Oil is easy too, just pour a little into a small twists top storage container and your all set.
2 cups flour
4 teaspoons baking powder
2 tablespoons sugar
2 cups water
2/3 cup powdered milk
2 tablespoons oil
Mix flour, baking powder, sugar, and powdered milk in a bowl that will seal tight or a Ziploc bag. When your ready for breakfast stir in water and egg. Add oil last and mix well. Your ready for a great camping breakfast.
