Chunky Chicken Soup

This family favorite has been nicknamed ” Casserole Soup”. We like our soup thick and chunky and this recipe hits the mark. It is great comfort food and perfect for a neighbor who is not feeling well.

Chunky Chicken Soup

8 cups chicken broth
4 large chicken breast cooked and cut into chunks (bite sized)
2 cups baby carrots cut in 1/2″ chunks (I steam these in a separate pan)
1 small onion–chopped
1 cup chopped celery
8 oz uncooked pasta
1/2 cup butter
3/4 cup flour
3 cups milk
2 tsp Kosher salt
1 tsp ground pepper

Bring broth to a boil and cook pasta according to package directions. In a small sauce pan melt butter.  Add chopped onion and celery, sweat or steam until tender.  Stir in flour into melted butter, then stir in milk and pour into cooked noodles.  Add chopped chicken and cooked carrots.  Stir in salt and pepper. Let simmer stirring occasionally for about 2 minutes.   Remove from heat.  Let stand for 10 minutes.  Sprinkle with parsley flakes for a little flare and serve. Makes 12 cup servings.  Enjoy!
