“Carrot cookies?” my sweet husband said in that, “okay my wife is nuts” tone. I promise they are good. The sweet flavors from sugar and carrots make a yummy combination. You don’t even realize your eating carrots.
Carrot Cookies
1 cup cooked mashed carrots
1 cup shortening
1 cup sugar
1/2 tsp. lemon or orange flavor
2 1/2 cups flour
1/2 tsp. salt
2 tsp. baking powder
1 cup nuts (optional)
Mix in order. Drop onto greased baking sheet.
Bake 375 degrees for 8-10 minutes
Ice while hot
Orange Flavor Frosting
3 cup powdered sugar
1/4 cup orange juice
2 Tbls. melted butter
Slowly add orange juice to powdered sugar. Stir until smooth. Add melted butter, beat until well blended.
