Ham Fried Rice

My sons are like a lot of kids these days ( they are not little), they are not big fans of vegetables.  When I have served cooked broccoli and raw carrots for weeks I through in a wild card that I know they like and will eat a lot of.  
I make “Ham Fried Rice”
3 Tbsp. olive oil
1 cup carrots
2 cups diced onions
1 1/2 cup diced celery
1/2 cup each, diced red and green pepper
1-2 cups diced ham, pork, chicken or shrimp 
1/2 -3/4 cup soy sauce
6 cups cold cooked brown rice
1egg, well beaten
In medium hot non-stick frying pan, add 1 tsp. oil and beaten egg.  Make a thin egg crepe by rotating pan and turning the egg only once.  Remove from pan and set aside.
Add remaining oil to hot frying pan.  Stir fry carrots one minute, stir in other vegetables cooked covered stirring occasionally until crisp tender. 
 Add ham (meat) and soy sauce.  Break up cold cooked rice. Stir into vegetables until well blended.  Heat through. Cut egg into thin strips and add to rice.  Serves 8-12.
