This appetizer quickly became a favorite at our house and you may as well not bother with dinner after, go straight to dessert, it is very filling and you
just won’t want to eat just a little bit.
Sausage & Bean Dip
1 lb hot Italian sausage
1 medium onion, chopped fine
4 cloves garlic, minced
1/2 cup apple cider or chicken broth
1/2 tsp oregano
1/4 tsp salt
1/4 tsp thyme
8 oz cream cheese
6 oz fresh spinach, chopped course
1 can white beans, 15 oz, drained and rinsed
1 cup chopped tomatoes
1 1/2 cup grated mozzarella cheese
3/4 cup grated fresh parmesan cheese
Your favorite crackers of corn chips
Prepare onion, garlic, spinach, seed and chop tomato. Over medium heat brown sausage with onion and garlic, drain. Stir in juice or broth, spices and bring to a boil. Cook 5-10 minutes or until there is no visible liquid in the pan. Stir in cream cheese until melted. Add tomatoes, beans and spinach, cook and stir for about 2 minutes, or until well coated, do not over cook. Pour into buttered 9″ pie baker or 9′ X 9″ baking dish. In a mixing bowl combine cheeses and sprinkle evenly over the top. Bake at 375 degrees for 18-20 minutes or until cheese starts to toast. Serve hot with crackers.
