Kathleen’s Meat Loaf

There are probably as many recipes for meat loaf as there are families who enjoy it.
This is the one that my mother made while I was growing up. She would probably still make it but she doesn’t like to cook anymore. The the name,“Kathleen’s Meat Loaf”

 My Dad was strictly a meat and potatoes man and he loved meat loaf.


Recipe

2/3 cup bread crumbs
1 cup evaporated milk
1 lb lean ground beef
1 lb ground pork
2 slightly beaten eggs
1 cup grated onion
1/2 tsp salt
1 tsp rubbed sage
Soak bread in milk for a few minutes. Mix in the remaining ingredients using your hands. Form in a loaf on a cookie sheet or a  9″ X 13″ baking dish. Bake at 350 degrees for 1 hour.
Topping
Stir together: 6 tbsp brown sugar, 1/2 cup ketchup, 1/2 tsp nutmeg, 2 tsp dry mustard. Spoon over meat loaf the last 20 minutes of baking.
It seams like meat loaf kind of gets a bad rap, like fruit cake but it really is delicious. Give it a try.
