A New Kind of Apple Pie

As you can probably tell from the posts on our blog, our family loves desserts. The most favored being cake. We also love cookies but in there somewhere we have to through in fruit desserts, not everyone’s favorite. There are however a few of us that like a good piece of pie, fruit pie. So here is a new kind of apple pie for us. A Galette.

I have seen recipes and pictures of a Galette but never tried one until now. John discovered this recipe while watching YouTube and thought we’d try it, as always with a few little changes. Well, it turned out great and we truly have a new kind of apple pie.

Recipe

Crust

1 2/3 c all purpose flour

1 3/4 Tbsp sugar

1/2 tsp salt

11 Tbsp butter, cold and cubed

1/4 c ice cold water

Wisk flour, sugar, and salt together until combined. Cut in cold cubed butter until flour mix has become pebbly. Stirring with a fork add ice cold water until combined but still crumbly. Mix together further with your hands but do not overwork the dough. Dump dough out onto a sheet plastic wrap, squeeze into a mass, wrap and flatten into a big circle (about 7″- 8″ in diameter). Refrigerate for at least an hour. Allow to sit at room temperature for about 15 minutes before rolling out. Preheat oven to 375 degrees.

While you’re waiting 15 minutes mix together the filling.

APPLE FILLING

3 med-lrg Granny Smith apples, peeled and sliced into ¼” thick pieces.

1/4 c granulated sugar

2 Tbsp corn starch

1/2 tsp salt

1 tsp cinnamon

1/4 tsp ground nutmeg

1 tsp lemon juice

In a medium mixing bowl, gently combine apples with the rest of the ingredients to coat. Allow apple mixture to sit while you roll out the dough.

Assembling Galette

Roll out dough disk, using downward pressure, into a flat 12” wide circle. Transfer onto a piece of parchment paper then continue to roll into a 13-14” wide circle. Pour apple mixture in the center 7-8 inches of galette dough and fold edges of dough over apple forming pleats in the crust.

Brush visible crust with an egg wash ( 1 egg whisked with a 1/2 tsp water) then sprinkle egg washed crust with shimmer sugar (you can use regular sugar). Drizzle any cinnamon mixture remaining in the bowl over the apples. Place 3-4 slices of butter on the apples.

Transfer galette and parchment onto baking sheet and bake 40-50 minutes, rotating pan halfway through.

Cut yourself a wedge and serve with vanilla ice cream. Delicious!!
