After working all day painting house trim I was ready for an easy dinner. I had it all planned. So, I left my husband outside to clean paint brushes and I started browning hamburger for tacos. It was going to be so easy. I had the hamburger browned and the taco shells in the pan when I remembered we used the last of the cheese for lunch. My family was hungry. I needed something quick and I was out of almost everything. I quickly mixed my muffins and got them in the oven. While they were baking I scrambled eggs. We had breakfast for dinner. Everyone loved it! Bonus for me all I had to do was get cheese and I had easy dinner almost done for later in the week. Win! Win!

I love these muffins. They are so easy to mix and they cook in 10 min.
They saved the day.

Muffins

2 cups flour
2 tablespoons sugar
3 teaspoons baking powder
2 tablespoons oil
1/2 teaspoon salt
1 cup milk
1 egg
Mix flour, sugar, baking powder, and salt in mixing bowl. Whisk milk, oil and egg. Pour into dry ingredients. Blend with no more than 25 strokes. Fill greased muffin tin 2/3 full.
Bake at 425 degrees for 10 min.
