I am a cookie monster, no question. I don’t make a lot of sandwich cookies for the simple reason that I know I shouldn’t eat as many. Two at a time? Oatmeal Carrot Sandwich Cookies are fun, tasty and full of healthy ingredients.
Oatmeal Carrot Sandwich Cookies
1 1/2 cup flour
3/4 cup quick oats
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp cloves
1/2 tsp ginger
1/2 tsp baking soda
1/2 tsp salt
3/4 cup butter, softened
1/2 cup white sugar
1/4 cup brown sugar
3/4 cup finely grated carrots
1 large egg
Sift together dry ingredients and set aside. Using a mixer cream together butter and sugars until light and fluffy. Add egg and carrots. Mixture will look curdled. Stir in dry ingredients until blended.
Line 2 cookie sheets with parchment paper. Using a cookie scoop(about 1 rounded tablespoon) place scoops on parchment paper about 2 inches apart. Bake at 350 degrees for 18-20 minutes. Do not over bake. Cool completely.
Filling
1 cup marshmallow cream
4 ounces cream cheese, softened
4 tbsp butter, softened
1 tsp vanilla
Combine all ingredients in a mixing and with an electric mixer on medium speed, mix for about 3 minutes or until thick. Spread 1 tablespoon filling on the flat side of cookie and with a sandwich with a second cookies. Makes 1 dozen sandwiches.
They are quit wonderful and the marshmallow cream cheese filling doesn’t squish out like you might think. They are great frosted as single cookies with regular cream cheese frosting. It’s that double cookie thing I talked about before. I just have to eat less. Enjoy!
