The recipe search for delicious Crisp Orange Pizzelles began last year after I purchased a Pizzelle iron. Twenty plus years and several homes ago, we had a wonderful neighbor that introduced us to Pizzelles. A couple of days before Christmas he would bring a stack of cookies carefully wrapped in aluminum foil. They became fast favorites. So when we moved away they were greatly missed.
In the search we found most recipes were kind of standard. The flavor we remembered was citrus so this is our take on the standard. Here is how to make delicious Crisp Orange Pizzelles.
Orange Pizelles
3 eggs
3/4 cup sugar
1/2 cup butter, melted
2 tsp orange extract
1 tsp orange zest
1 3/4 cup flour
2 tsp baking powder
Powdered sugar (optional)
In a medium bowl, whisk eggs and sugar until light yellow and thick ribbons fall from the whisk. Add melted butter, orange flavor and zest until blended. Sift together the flour and baking powder. Fold flour mixture until just blended 1/2 at a time. The batter is thick.
Heat pizzelle maker according to manufactures instructions. Using a pastry brush to lightly butter all surfaces of the pizzelle maker. Drop about 1 Tbsp of batter in the middle of each pizzelle mold in your maker. According to manufactures instructions cook until golden brown. Transfer to wire rack and let cool. Repeat. They cook very quickly. I like to lightly dust some of them with powdered sugar. I think it makes them look more festive. They’re a great compliment to Chocolate Madeleines.
