Guyanese-Style Chicken Chow Mein
Ingredients
5 tbsp oil
2 tbsp grated ginger
1 pepper (hot) chopped fine
2 cup carrots, julienne
1/2 cup celery, sliced
1/2 cup onion, chopped
1 tsp Chinese 5 Spice
1 bunch green onion, julienne, set aside to garnish
2 chicken breasts, bite sized pieces, marinated
2 6 oz packages of Chow Mein noodles
1/2 chicken broth
Chicken Marinade
1 tbsp Oyster sauce
2 tbsp Soy sauce
1 tbsp grated ginger
1 large clove garlic chopped fine
1/4 tsp thyme
1 tsp basil
1/4 tsp marjoram
pinch each of Rosemary and Tarragon
Stir together marinade and add chicken to coat. Let set 30 minutes.
Heat 2 tbsp oil in wok. Add marinated chicken and stir until chicken is cooked. While chicken is cooking, bring a large sauce pan of water to a boil and cook the Chow Mein noodles according to package directions. Drain and rinse with tap water. Remove cooked chicken from wok and set aside. Wipe wok clean and heat 3 tbsp oil over high heat. Add ginger and pepper, fry 1 minute. Add vegetable and stir fry for 3-4 minutes. Add back chicken and broth cover and steam for 5 minutes. Add noodles, Chinese 5-Spice, green onions and toss together and cook for another 3-4 minutes or until noodles are reheated.
This new style Chow Mein ( for us) has a different flavor and just a little kick. Enjoy.
