Last week I came home from work to find that my husband had been cooking up a storm. The house smelled divine. I looked and found he had made rolls and bread. I said “You never make bread”. His reply was ” I know.” He wanted to try a new kind of bread. What he came up with was his own version of oatmeal bread we call “Oatmeal Molasses Bread”.
2 1/4 cups boiling water
1 cup quick cooking oats
1/2 cup molasses
2 tbsp honey
1/4 cup canola oil
1 1/2 tsp salt
2 tbsp SAF yeast
2 1/2 cups whole wheat flour
3-3 1/2 cups all purpose flour
2 tbsp butter, melted
In medium sauce pan stir molasses, honey and oil into boiling water. Measure oats into electric mixer bowl. Pour hot water mixture over oats and let stand until cooled to 110-115 degrees. Mix yeast and salt into whole wheat flour, using dough hook stir into cooled oat mixture until smooth. Add enough all purpose flour to make a soft dough. Remove dough hook, cover and let rise until doubled, about 1 hour. Punch down dough and turn onto lightly floured board. Form two loaves, place into 2 greased 8″ X 4″ X 2″ loaf pans. Cover and let rise until doubled about 45 minutes. Bake in a 350 degree oven for 40 minutes. Remove from pans and brush tops with melted butter.
It never ceases to amaze me the affect that the smell of fresh bread can have. There is nothing like it. Make some today!
