Many years ago my sister-in-law introduced Iowa Salad to our family and it quickly became a favorite. After I was married and started my own family it got forgotten. (My husband was not a big jello fan). ย Just a few years ago, maybe five it was rediscovered.

It is a refreshing summer, fall, spring or just about anytime salad. Make it up the day before and serve it up as a side or appetizer.

1 – 2 oz package orange gelatin

1 – 2 oz package lemon gelatin

2 cups boiling water

1 1/2 cups cold water

1 15 oz can crushed pineapple, drained reserving juice

2 bananas, diced

1 heaping cup mini marshmallows

1/2 cup sugar

2 tbsp flour

1 cup reserved pineapple juice

1 tbsp butter

1 egg, beaten

1 cup whipping cream, whipped

1/2 – 1 cup grated medium cheddar cheese, small grate

In a large mixing bowl, dissolve the gelatin in boiling water. ย Add cold water and stir. ย Place in refrigerator until consistency resembles egg whites. ย Fold in drained pineapple, bananas and mini marshmallows. ย Pour into 9″ X 13″ X 2″ย pan and place in refrigerator to set.

ย  ย  ย  ย  ย  ย  ย  ย  ย  ย In a small sauce pan mix togetherย flour and sugar. ย Add pineapple juice and egg. ย Stir with whisk until there are no lumps. ย Cook and stir constantly until thick. ย Stir in butter.ย  ย  ย  ย  ย  ย  ย  ย  ย  ย  ย  ย  ย  ย  ย Let cool to room temperature or colder. ย Fold in whipped cream.

 

ย Spread on top of get gelatin. ย Sprinkle with grated cheddar cheese.

 

 

 

The layers make it a pretty dish to take to a party too.
